Egg-Free & Dairy-Free Chocolate Chip Cookies (Using Duncan Hines Cake Mix)
Ingredients:
1 box Duncan Hines Yellow or Spice Cake Mix
1/2 cup unsweetened applesauce (as an egg substitute)
1/4 cup dairy-free margarine.
1/4 cup water (or less! Be sure to judge by consistency of dough)
1 tsp vanilla extract
1 1/2 cups Enjoy Life allergen-friendly chocolate chips
Instructions:
Prepare the Dough: In a large mixing bowl, combine the Duncan Hines Cake Mix, applesauce, dairy-free margarine, water, and vanilla extract. Stir until well combined. The dough will be thick.
Chill the Dough: This is essential. Cover the dough with plastic wrap. Chill it in the refrigerator for at least 1 hour. Chilling the dough helps the cookies hold their shape and prevents them from spreading too much while baking.
Preheat the Oven: Preheat your oven to 350°F (175°C). Some people line their cookie sheets with parchment paper, but I personally just spray the pan with PAM and call it good.
Scoop the Cookies: After the dough has chilled, use a cookie scoop or a tablespoon to drop rounded balls of dough onto the prepared baking sheet. Leave about 2 inches between each cookie to allow for spreading.
Bake: Bake in the preheated oven for 10–12 minutes or until the edges are golden brown. Keep an eye on them, as baking times may vary based on your oven.
Pro Tip: Cookies will keep cooking once they are removed from the oven. I pull mine out while they are still soft and only slightly golden on the edges. Go with this method if you like your cookies gooey like I do.
Cool: Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
